What would you eat?

Forget Lexington vs. Eastern style BBQ, what if you were allergic to food? Tonight I met 10 year old Zach Wilson from Burlington. Zach suffers from a rare disease called eosinophilic esophagitis, or EE for short. Basically white blood cells attack certain foods Zach eats, and figuring out which foods he can eat has proven to me a life long struggle.

At 8 years old Zach weighed just 38 pounds and vomited five out of seven days a week. After a lot of doctors, a lot of tests and a feeding tube for more than two years, Zach has a list of about 20 foods he CAN EAT.

As of today Zach can eat:

Bananas, strawberries, grapes, oranges, tomatoes, cantaloupe, green beans, white potatoes, sweet potatoes, chicken, beef, pork, tangerines, wheat, corn, oats, rice, salt, pepper, and sugar.

Apples and milk products have proven to make Zach sick to his stomach. Spices or added seasoning forget it. This month Zach is testing soy with the other foods he can eat. So far soy seems to be staying down...for the most part.

I think any of us in Zach's position would sneak a treat or two, but we don't get the back lash Zach gets. Zach ate a few sour cream potato chips at a friends house about a month ago...today he paid for it, puking and all day.

For the most part Zach doesn't cheat on his diet. Zach went two solid years without eating anything beyond his list of foods, which at the time included about half the foods he can eat today. I can barely limit myself to two brownies.  I admire Zach's self control and positive attitude. Zach hasn't let EE stop him from playing soccer, baseball, basketball, and soon football. Zach doesn't pity his situation he laughs at it and says "this is just part of my life."

Sad story; food allergies are nasty, especially for a child.

The story reminds me of watching a piece about NHL player Tom Poti. The team's trainer has a HUGE list of stuff Tom can't eat or be next to since he has such violent allergies. I was blown away.

Can they treat his EE with fluticasone, or is he too young?

There is hope...My son was born with severe food allergies. We found out when he was just a few weeks old. He was allergic to all milk/dairy products, eggs, all grains except rice, strawberries, bananas, fish/seafood, turkey, food additives such as MSG, chocolate and more. The specialists called him the worst case in the US that wasn't living in a bubble. They told us he wouldn't live to see his 8th birthday. In addition, he had asthma and the allergies trigged severe asthma attacks.
BUT THERE IS HOPE...common sense is a wonderful thing if you use it. His formula was Isomil, and although it is a soy product, he managed on it until he was 2 years old. If he reacted to something, whether it was food or an animal, he learned to avoid it. If he didn't, he learned that he was the one who had to pay the price. From the ripe old age of 3, we taught him to be responsible for his choices and we monitored what he was exposed to. Make no mistake, it wasn't easy, eating out was almost impossible, but with God's help and a positive attitude, Adam has survived and become a wonderful 20-year old college student with top grades and a strong spirit. We treated him like any other little boy (other than the obvious restrictions) and he developed a "can do" attitude. He is taill allergic to most of the same things, but he has learned the coping skills to live a fairly normal life. He's a musician, ahtlete and looks like any other guy, but he'll have to live with these problems the rest of his life.

I see that Zach wants to be able to eat pizza. Well, my 9 1/2 yr old son just had his first safe pizza last week, and it has the same safe ingredients Zach can have. My son also has E.E. and after 3 years of food trials, he is up to 9 safe foods (white potato, sweet potato, corn, rice, tomato, lamb, chicken, broccoli, pineapple) 10, if you count the all important chocolate (if you need to trial chocolate, Enjoy Life brand has a pretty safe chocolate chip)!

If Zach's mom is reading, or if this message can get back to him, Whole Foods sells a frozen pizza crust: "Nature's Hilights Brown Rice Pizza Crust". We used Muir Glen Fire Roasted Crushed Tomatoes on it and it was pretty tasty. I added some chicken as a topping, since that's safe for him, which it is for Zach as well. If they don't happen to have a Whole Foods Market nearby, I see that you can also order online. Just do a search for Nature's Hilights. I didn't find a website for them and my call to the company was not returned, but I was able to find websites that sell them.

I hope Zach is as happy to find out that there is a safe pizza as my son was!

I think it is great how several of you are sharing ways to help this little boy through ways you have experienced with your own children. I wish Zach the best, and hope he can enjoy that pizza.
